Oh deliciousness, I have found you!

Seriously, what is better than bacon and avocado? I came up with this recipe while trying to use up leftovers I had sitting in my fridge from other recipes. It ended up being so good, I ate two of them that day. There’s something about the saltiness of the bacon that blends so well with the acid from the tomatoes and the creaminess of avocado. I think I could eat this every day without a complaint. Luckily, after redoing photos for the Ginger Dijon Vinaigrette last night, I was once again left with extra tomatoes and avocados.

And, since I’m now back in the same state as Master Gardener Mama Soul, you know the first thing she did when I moved into my new place was supply me with an herb garden, right? One unseen benefit of the herb garden is that it’s bringing new visitors to the yard:

The other great part is, she set it all up for me so I don’t have to do a thing except fully neglect the plants and occasionally pull off some of the leaves for cooking. I love zero effort gardening! So, what all of this means is, I have plenty of fresh chives for cooking.

We’ve got chives, tomatoes and avocados. This sounds like the beginning of a fantastic dish. Let’s make an omelette.

Ingredients:

3 eggs
1/2 avocado, diced
1/2 tomato, diced
3-4 chives, chopped small
1 tablespoon water
1 tablespoon bacon fat
salt & pepper

Step 1: Scramble together eggs, water, chives, salt and pepper. Melt bacon grease into a pan over medium low heat. Add egg mixture to the pan.

Step 2: Once the eggs are almost cooked through, but still a little liquid on top, add 3/4 of the chopped tomatoes and 3/4 of the chopped avocado. (Note: If you had to cook bacon to get the bacon fat, crumble up the bacon and add it here as well.)

Step 3: Fold the bottom of the eggs over the tomato and avocado filling. Cook for a few seconds to hold in place.

Step 4: Then, continue to roll the omelette from the bottom up to fold the avocado and tomatoes inside. Top with the other 1/4 tomatoes and 1/4 avocado and serve.
