So, I might be a little crazy. It’s 92°F outside right now, and I don’t have air conditioning here, so let’s just say my house is a little… warm. Heh. I think most of the town is probably elbow deep in a bucket of ice cream and a frosty beverage or two. And who could blame them? It’s one heck of a way to beat the heat!

I decided to do things a little differently.

I decided to stand in my hot kitchen, over my hot stove, and make Jambalaya.

Because… why not?

I know, I’m totally nuts, right? Right. But hey, at least you get a delicious dish out of it!

This is a grain free jambalaya, so no rice at all. It’s an awesome dish if you are looking to cut back on the carbs a bit, or if you just want to add a few more vegetables to your diet.

Ingredients:

4 roma tomatoes
1 green pepper
1 red onion
4 stalks celery
3 cloves garlic
13.5oz andouille sausage
12oz ham
3 tbsp oil
0.5 cup chicken broth
pinch parsley
pinch paprika
3 bay leaves
half pinch cayenne pepper
1 head cauliflower

Step 1: Prep: Dice tomatoes, pepper, onion, celery and ham. Slice andouille thin. Crush and chop garlic. Chop or grate cauliflower into rice-sized (approximately) pieces.

Step 2: Heat oil in a pan over medium high heat. Once heated, add andouille and ham to the pan and cook until the andouille has a bit of a sear and there are some brown bits on the bottom of the pan.

Step 3: Add onions, celery, green peppers and garlic. Turn heat down to medium and cook until onions are translucent.

Step 4: Add tomatoes, chicken broth, parsley, paprika, bay leaves and a sprinkle of cayenne. Cover and simmer until the vegetables are soft and there is a lot of liquid in the pan – about 20 minutes.

Step 5: Uncover and turn heat back up to medium-high to boil out some of the liquid. Boil out enough liquid so the mixture looks a little dryer than you would like the final product to be. (*See note.) Once you have hit that “dry” point, turn the heat back down to medium, mix in cauliflower, cook for an additional 10 minutes.

(* Note about cauliflower: Standard Jambalaya uses rice, which will absorb any extra liquid in the pan. Cauliflower does the exact opposite and will add water to the pan as it cooks. So you want to boil extra liquid out of your sauce so that when the cauliflower adds liquid back to the pan, the sauce won’t be too soupy.

Step 6: Serve and enjoy! If you’d like a little extra spice, top your portion with a dash of hot sauce.

  1. We eat jambalaya a couple of times a month and are just starting to switch to a more scd diet. Tonight I used a combination or my recipe with yours – replacing the brown rice we usually use with cauliflower, and I LOVED it! Thank you
